How and why did they start? Why do we have mint sauce with lamb, cranberry sauce with chicken and turkey, apple sauce with pork etc? What started it all?

...don't know, but I've just had (home-made) cranberry sauce on a roast pork sandwich....and the rest of it on some Greek-style yoghurt.
Interesting little exploration here into the Lamb/Mint issue.

Some condiments just liven up the food (such as Japanese pickles) and some have a purpose such as raita cooing the heat of the spices.

Hate any kind of sauce on my meat. Cook it to perfection then smother it with something else - why?
Don't forget Horseradish - traditional with beef.
