Tenderloin. Trim all the bits of fat off.

Slice it into medallions about an inch thick.

In a bowl put some flour and mix in herbs, mint, basil, sage, coriander, parsley is a good mixture.

whisk an egg in another bowl, coat the medallions in it and cover well with the herb and flour mixture and fry on a medium heat until the coating is golden.

Serve with a potato and sweet potato mash, with peas, sweetcorn and carrots.

Just one of our favourites.
add onions alittle fresh mint, a pinch if turmeric, salt , pepper , shape in to burgers , and grill ,not fry , as there is a lot of fat already in the lamb mince , do not add any oil to pan, or you can just put on a baking tray and pop in the oven for 15 mins , depending how much mince you have make a meat loaf ,
sorry i was sending that one to my sister , ............with the loin i just stab it a few time with a sharp knife then push garlic in to the holes , cover it with honey the in to the oven for 20 mins, do try and trim the fat etc off the lamb first, enjoy

I like my food pretty simple so I'd concentrate on making a nice sauce.
I've used this kheema recipe for ages.
