How long will home made chutney keep once the jar has been opened?

My guess is that it might depend on the recipe. Some ingredients protect against spoilage better than others.
My guess is only you can tell ..
.. as it's home made, obviously there will be no storage instructions.
If spores start forming on it, the time to dispose of it has already gone.
The best tip I can offer as a fellow chutney maker, is use the smallest jars you can get hold of for future batches.
The smaller the jar .. the less waste.
My apple and onion chutney keeps for about 3 weeks in the fridge once the jar is opened although it's rarely around that long.
Providing it has plenty of vinegar in it, it should last for years. The jar should have a plastic screw top to seal it. Maybe lined with cellophane or paper . Metal is no good, as the vinegar will corrode it. I have kept home-made chutney for many years and it has never gone off, or gone mouldy in any way. In fact, it gets better the older it is, and whether it has been opened makes no difference. Chutney does not have to be sealed tight like jam, which can go bad after being opened.
