hi islay no lol i cheated on the pasta but i made a cheese sauce from scratch and the rest from scratch

It doesn't really taste the same though does it Eccles - the honest answer is I don't know - I have avoided it purely because of the fat content
I know what you mean. Just wondering how you would get on with scoring and rendering then removing the fat, giving it some colour and then blotting the meat.

It might be worth trying on Mr Islay and you have a taste to see how you get long. No reason why you can't continue to crisp up the skin for him.

He doesn't eat duck at all!! But I could buy a breast and cut it into 3 and freeze the other 2 thirds I suppose
Only because he's off work, Eccles, and if I'm honest because my daughter will be home by 8 and I didn't want to share :-)
I would happily eat it without the fat.

Will get some tomorrow and give it a go, I have some frozen cherries that will go lovely with it.
Yum...I might get cherries for next time.
Duck meat, imo, is as tender as a fillet steak but tastes much better. I don't think the fat adds flavour unless it's crispy duck.
