What on earth is Queso?
Question Author
im taking it you dont have a recipe then?
"What on earth is Queso"

It's Spanish for "cheese", in the same way as "Carne" is Spanish for "meat".
This is the one I have used on occasion
Sounds revolting.
Well its a good job that bednobs is not asking for your opinion then isn't it Jackdaw!
Question Author
well thanks for all your miserable help jackdaw (!). I don't give a stuff what YOU think about it WE like it, and believe me i will NOT be bringing any round to you and forcing it down your throat on pain of death.
No need for that. I was just expressing a culinary opinion. Perhaps you should take to heart the first two words on your avatar.
Question Author
no need to be so miserable either, yet you seem to manage it often
Never heard of it.

Ignore Jack....he just likes alcohol and fags!! :-D

LOOL. Not to eat surely, “Chilli-Con-Queso” sounds divine and alcohol and fags is a great desert ;)
“The coven seems to be gathering!”LOOL

I love the spreading of love, peace, harmony and Xmas cheer on this site.

Btw what or who is the coven? Culinary coven?
Like a thick sauce
"coven" ... how certain male members of AB describe the female members of AB when they are voicing opinions as a group.
3 tablespoons unsalted butter
1 small yellow onion, diced (about 3/4 cup)
1 large jalapeño pepper, finely diced (see note)
4 cloves garlic, minced or pressed through a garlic press
3 tablespoons plain flour
Cup of whole milk and a cup of half fat cream
4 ounces grated sharp Cheddar cheese
4 ounces grated Monterey Jack Cheese
1/4 teaspoon cumin
1/4 teaspoon salt
2 tablespoons finely diced tomatoes (use only the flesh, no seeds or juice)
1/4 teaspoon crushed red pepper flakes, optional for more heat

Begin by melting the butter in a medium saucepan.
Sauté the onions and jalapeños until soft, then add the garlic and cook about 30 seconds more.
Add the flour.
Cook, stirring constantly, for about a minute.
Then pour in the milk and cream after mixing.
Bring to a simmer and cook for a few minutes, or until thickened. Reduce the heat to low and gradually add the shredded cheese, whisking as you go.
When all of the cheese is incorporated, stir in the cumin, salt and tomatoes. Taste and adjust seasoning if necessary; if you’d like more heat, add the optional red pepper flakes.
Then throw it down the sink or give it to someone that you dislike. Or add to the Cauldron.
LOL @ Togo!
Haven't tried it but Cheese and Chilli equals heaven.
