Thankfully, nobody official cares about gender. Just biological sex is requested. A simple DNA test will easily tell you which yours is, if you are unsure.

Official papers ought not care what you think you are. No one can read your mind anyway. The papers are for identifying you, and one's sex is something that can be checked. To allow neutral, the equivalent of undecided, or worse, not telling, would make a mockery of it.

(Or Jim... whoever). We have had claims of people identifying as a different species. Also, white people, identifying as black (and being vilified, actually).
But can either of you please explain, why cultural misappropriation or pretending to be a different species, is unacceptable, while sex misappropriation is fine? At what point is a line drawn?
