What would be a nice "main dessert" to be accompanied with pineapple ice cream?

Something which includes coconut and, perhaps, white rum. This would then have similar appeal to a pina colada cocktail.

I'm amazed that no one mentioned a pineapple fritter which would be the perfect company for some pineapple ice cream.

I'd go for a pineapple carpaccio with a chilli, lime and ginger syrup. And make some pineapple crisps by cutting uber thin slices and dehydrating in a very low oven.
