Are you asking about pancake day, or Shrove Tuesday?

They are of course the same thing. Shrove Tuesday is celebrated in all the Christian countries around the world, and eating pancakes was just a convenient way of eating eggs and sugar before Lent.

Pancake day is a term invented by the advertisers of a certain lemon juice product

Sorry,Shrove tuesday.......................Did it originate in Linby Nottinghamshire??
errr - I thought it was the start of lent.. when you give up stuff so use up all the eggs etc... then in 40 days it's Easter (when we now gorge on chocolate) - however - I defer to Ethels knowlege..
Its actually the day before Lent begins. Its also known as fat Tuesday in some parts of the world.
To answer the question, it seems there is a legend attached to Linby. From the internet ......

The quaint village of Linby is renowned locally as the place the pancake was invented, baked to honour brave local women who killed Danish invaders who enslaved them after their husbands fled.

However, the website doesn't say anything about 'Pancake Day' - only pancakes - so I agree with other posters. Pancakes are a way to use up left overs from the larder on Shrove Tuesay before the beginning of Lent.
Incidentally, to expand on enthandron's post, Fat Tuesday is Mardi Gras - carnivals and parties enjoyed before the restrictions of Lent.
