Does anyone know if Costco's carrot cake can be frozen and if so, does it keep its texture when defrosted? Many thakks in advance.

although i've never frozen one, i would think it would be fine as just about all cake freezes well and retains it's texture. i have frozen their huge chocolate cake and their huge fruit pies and they were ok.

Many thanks ethandron. I will give it a try. I want it for Boxing Day and there is no way that I am going to Costco at the weekend. It will be like a madhouse.
i know what you mean!!! we did our last trip there last week and that was bad enough. it's a great place though isn't it? i've bought a huge rich fruit cake with cherries and nuts on it this year, instead of a christmas cake, and the use by date is end of february. also got an enormous roll of reversible christmas wrapping paper, really good quality and completely different on each side, so have now wrapped all the presents.

I love their smoked bacon. Have you tried their camembert in breadcrumbs? There are 6 in a box. Little round cheeses covered in breadcrumbs. I gently warm some cranberry sauce and serve the cheese with cranberry sauce and a small salad as a starter. Mmmm. Have a great Christmas ethandron.
