whats the best way to make icing rof a christmas cake

Traditionally you use Royal icing which is egg white and icing sugar beaten together!! thats it!! Its great aswell cos you knife it on really rough and ready and then the cake looks like its covered in snow!! YOu can put a skiing snowman on top of it for a better effect n stuff like that!!!! Add some lemon juice aswel to the mixture makes it gorgeous!!
I don't like the traditional marzipan and icing so I use a fondant icing. You can buy it ready made - just roll it out and put it over the cake (a little apricot jam on the cake first is advisable). I like this sort of icing as you can colour bits and cut out shapes to go on to the cake.
MMmmm is that rolled icing bensmum??? Its sooo nice I love the tast of it!! Its dead easy to make yourself but i cant remember how. My ex used to make it all the time cos he was a chief and used to do loads of cakes!! The stuff you buy that bensmum was talking about is just as good and you can make it into any colour you want by needing in food colouring!!
