A tiny bit of vinaigre in soup and gravy just lifts the flavour -and of course you can reheat soup with onions or vinaigre. I blanche chopped onions and freeze them in portions so if I need to add some they are ready prepared -they saute up lovely
Vinegar and onions in soup? You betcha... one of our favorites, especially in the fast approaching winter, is Traditional Northern Chinese Hot and Sour soup. Lotsa vinegar with some onions and a bunch of other ingredients... and it only gets better with age... (unlike some on this site).
The secret to really good hot and sour is the Wood Ear mushrooms and Chinese Hot Chili Oil (plenty of unflavored tofu doesn't hurt the texture either
