Today I have mine stuffed with butter bit salt, home made Chilli con carne and sprinkled with cheese :o)

I often bake two at a time, I have one with lots of butter and black pepper. The second one I scoop out the innards, mash with some butter, cheese and sweated leeks and refill and cook them the next day.

Lol I haven't had lunch yet...not sure what to have. I don't have any potatoes in the house at the mo and I can't be bothered to go and get some! lol

I always find lunchtime food a pain in the whatsit, you want something filling yet not too heavy. We eat our main meal about 7pm...

Loads of cheese and butter or chili con carne but the potatoe needs to be very large.
Never in a microwave, sorry.

Plenty of butter, salt, a good, strong cheddar cheese grated and, if I am lucky, a pickled walnut.
I like hot & cold of BPots with tin of tomato pilchards ooozed over
