Quite enjoy a sausage casserole now and again with plenty of veg added.
Take them out of their skins and roll into meatballs, fry, make a tomato sauce and throw it all over some pasta.

How would you make your casserole, like how would you make the gravy - would you fry your sausages first?
Sausage and mash my way!

Brown sausages and remove from pan
fry off an onion and some bacon
stick in some mushrooms
Stir in some flour
then some beef stock and lots of lovely red wine (reserving a glass or two for the chef!).
boil until thick
Stir in some Lee and Perrins and a tbs of branston pickle
Season
Return sausages to pan and simmer for a good hour

Serve with mustardy mash.
Oh god BM, I'm saving that, it sounds wonderful.

My mum used to make stovies (a kind of scottish potato hash) with sausages... but she wouldn't brown them off first. It still makes me a little bit sick just thinking about them even after all those years.

Her other stovies recipe was with Corned Beef.....................
I love sausage casserole - yummy.

Andrew - I bet your mum's corned beef stovies weren't as good as the ones that my mum made.
I made a cumberland sausage and chorizo Spanish style casserole a few weeks back it was lovely.
Before cats I was a dog person - on a Sunday I used to stick a sausage casserole in the oven and then go out for a walk for a couple of hours. Coming home to a hot meal was great.
