For me:

The end of the universe.

An unknown colour.

Maybe they aren't impossible to imagine, maybe I just cant imagine these things?

Scots Gaelic does have separate words for blue and green, but they cover slightly different ranges than their English 'equivalent'.

China, I used to love bacon sarnies, these days I struggle to find nice tasty bacon :(

But I don't see any new ones being invented - the spectrum, at least as human eyes currently see it, seems to be full - only named.
