It's just parliamentary courtesy.

All remarks in the Comons chamber have to be addressed through the Speaker or Deputy Speaker - and protocol demands that the S / DS is mentioned pretty frequently, as a mark of respect, to demonstrate that any Member speaking does so at the will of the Speaker.
