Does anyone know where I can buy Ayshire Bacon [apart from Scotland]...? P.S I mean in LOndon..

Yes I did watch Rick Stein,but thats not why I asked,I used to be able to get it at one of the Co-op stores but no more..

Does it shrink much?

 

I ask because I notice that it is wet-cured as opposed to the dry-cure bacon I always get (local Staffordshire stuff).  I always associated wet-curing in brine with the cheaper Danish varieties that shrivel to nothing and leave white scum in the pan - urgh!
