i am a crisp fanatic and i want to start making my own baked crisps. any one know how? salt and vinegar or prawn cocktail would be nice!!

Dunno how to do baked crisps - I make the unhealthy ones fried in oil & sprinkled with rock salt:) I think the flavourings are just chemicals in a powder so you might struggle with your favourites. How about trying dusting them with that stuff you coat chicken with to do Southern Fried chicken or similar. Could develop a new range:)

Use a potato peeler to pare thin strips of vegetable (parsnips, carrots, beetroot, potato etc). Toss in a teaspoonful of olive oil and then bake for 15 mins at 130 degrees c. a teaspoonful of oil might not seem like much but it really is enough. If you want them extra crisp dry off the veggies with some kitchen roll before tossing in oil.
I used to peel a large potatoe, then thinly slice them on a special kitchen implement called a 'mandoline' - you can use this to get the slices as thin or as thick as you prefer, then pat the potato slices dry on a tea towel, place them into a freezer bag and sprinkle in salt, pepper, paprika, cayenne pepper, any dry flavouring powder you like - seal the bag and give it a good shake - then oil a large baking tray and spread the potato slices evenly over the tray and bake in hot oven for at least 5 mins or until golden depending on oven temp settings/fan assisted etc. They taste lovely!
