When you leave GB via Dover there are both French and British border controls on the British side. Because of the problems in Nice the French have increased their security and are checking cars entering France more carefully. Because the French checks are in the port of Dover the delays caused affect traffic on the British side.
By the same token, when travelling from France to UK, both the British and French border controls are in Calais, so any delays caused there would be on French roads.
Until a few years ago all the British checks were done in Dover (coming and going) and all the French checks were done in Calais. A ferry emptying into either port caused delays as all the vehicles had to be checked at once. Checking the vehicles as they arrive at the port spreads out the checking time as the vehicles arrive in dribs and drabs.Changing the system to the current one improved flow through the checks; the curent delays are caused by increasing the checks without increasing the number of people to do them.

I think that a lot of Calais is already probably suffering. You used to go there, have a meal, go to the supermarket, perhaps stop over - at the very least have a drink and a wander around as you waited for your ferry time to draw closer. I don't think that any of that goes on any more.
I believe that many small businesses, restaurants etc. have gone/are going out of business from what I have read and heard.
