Has anyone ever tried using vegetarian sausages (quorn or linda mccartney) to make stuffing? I'm contemplating my Christmas dinner, and it wouldn't be the same with sage and onion stuffing!

Mmmm...why not take a look on the Quorn website.....they may have some suggestions there...Why not try stuffing a chicken first as an experiment???..I would mix the sausage with quorn pieces, and lots of onion to keep it all moist.

I'm a confirmed, card-carrying carnivore but I will say that sounds like a great dish.
It tastes like cardboard.....not worth the risk in lieu of traditional sage & onion.

I probably should have specified - this'll be my first christmas lunch as a vegetarian, and whilst I'm not bothered about replacing my turkey with a nut roast or whatever, my favourite part of the meal is the sage and onion stuffing - hence my concern about missing it!

Goodbyegirl - I can guarantee that recipe will be part of my festive lunch! Ta!
Can I ask what it is in sage and onion stuffing you can't eat being vegetarian, as all the sage and onion recipes, I have seen consist of no more than fresh sage, onion, breadcrumbs you can fry the onion in veg oil. You can bypass the need the for egg to bind together and use by shaping into balls and baking.

Ah, I'd usually have it with sausage-meat. I guess since I've always had it that way, I just assumed it was the only way!
I'd just fry a couple of quorn sausages (if you like them) and eat along with your sage & onion stuffing.
Quorn sausage will not so what you want. You need to get hold of some Sosmix from your local health food store. this si a dried mix you add egg oil and water to. This will do what you want very well
