In a couple of weeks time a friend is coming for dinner at my house. It won't be a formal dinner as I don't even have a table so we'll be eating from our laps.

I would love some suggestions for a main course that won't be hard to deal with, ie not steak. Maybe something you could eat with a fork would be a good idea, but not pasta as we have a lot of that normally.

Anything with rice.

Chilli con carne as a main course, with something refreshing for dessert. Perhaps a fresh fruit salad jazzed up with some alcohol.

i have a lovely recipe for tandoori chicken if you would like that (although it is rather hot for tandoori) but its lovely. served with rice or salad

Rice is a great idea. As for what to have with it I'd need to check he likes spicy food. I like the sound of the tandoori chicken so yes please to the recipe Lou 26.

Tandoori Chicken

Two chicken breasts
1 tsp Tandoori Indian curry paste
1 tsp kashmiri masala
1/2 tsp ground ginger
1/2 tsp garlic flakes
2 tsps fresh coriander
2 tsps chopped spring onion
1/2 tsp ground masala
2 to 3 tsps natural yoghurt
2 tbsps vegetable oil

Mix the curry paste, kashmiri masala, ginger, garlic, coriander, ground masala and natural yoghurt together to make a paste. Leave the chicken and spring onion out of the mixture for the time being.

Chop the chicken and marinate in the paste before adding a pinch of salt

Leave the chicken coated in the sauce in the fridge for a couple of hours (I usually leave it overnight)

Grill the chicken for ten minutes before moving into a frying pan

Fry the chicken with the spring onion and oil for approx. 1 minute.

Serve with salad or rice
Beef casserole , with all the root veg in it ,new pots , nice fresh bread to mop up the gravy !! Easy ,and not a lot washing up .

I like that idea too, now I'm spoilt for choice!
Poached Salmon

Salmon - either fresh or frozen salmon in serving sized pieces. If frozen, no need to thaw.

Put it in a microwave dish and cover with water or white wine. Sprinkle in the herb of your choice - I like Italian Seasoning.

Depending on your microwave - usually 3 to 5 minutes.

Serve with a nice green salad.

food doesnt have to be spicey,you could make a sweet and sour chicken with rice,but i can tell you the next morning i bet there is rice on your floor (or i just have very drunk friends lol)
I've just made a cripsy chilli beef and yesterday i made a sweet and sour chicken (just bought a new cook book) both served rice.
