Flipping chicken!!

Everytime i do a chicken casserole, the chicken is always still pink in the middle!
Doesn't seem to matter how long or what temp i cook it for, what am i doing wrong?!

What temperature and how long do you cook it for? Do you do it on the hob or in the oven? Do you cut it into pieces?
Try frying the chicken pieces in a little oil first with some onion and then add the water and whatever you want to cook it with and leave it to simmer for about an hour. It should definitely cook by then. Or put it in the oven on 160degs for 1 & half hours.
hi boobesque (I love your name!) I usually dry fry the chicken first to ensure it is definitely cooked through. It needn't be golden after frying, as you don't want it to be dry in the casserole, but white and firm and on its way to being cooked. Good luck :)

I do it in the oven at 180 for 1.5-2 hours, i use thighs so never thought to fry it first!

poach the chicken first
thighs will never look white like the other parts of the chicken when doing them as a casserole,change your cut of meat :)
