Hi sam - brown fave flavour of sausage, chop into 4, fry some diced onion and garlic til soft, add to any mix of beans you like, tin of tomatoes, a squeeze of tom paste, a slug of red wine, a little stock, 9don't make it over wet by the way, just enough liquid to make a sauce to cook the meal in) chuck in some herbs and season. Put in hot oven for 45 mins.

Hob method - fry onion and garlic, and brown off soss as before - game sausages are good for this like boar, venison, etc. - or beef ones. Use a tin of mixed beans, add some tomato paste and tin of chopped toms. Season, add herbs and simmer for 30 mins.

Check soss are cooked through before serving with a nice crusty bread to mop up the bits.

You can vary using deli style sausages - polish, spanish etc - or add cooked bacon bits, or add other veg - potato, carrot, etc - or add some cream to finish, or add some pasta as well, or add some chillis - you get the idea - no real hard and fast rules.
First brown the sausages under the grill, then put them in the casserole dish. I cheat and use a jar of "Chicken Tonight" (the creamy peppercorn one is really nice) to pour over the sausages. I also add mushrooms, onion and pepper to the sauce. Give it a good stir to make sure everything is covered in the sauce and bung it in the oven. I serve it with mashed potato, and as the sausages are already cooked from when you browned them, I just cook the casserole for as long as it takes the potatoes to boil.
Sausage Casserole

6 slices bread
2 lbs bulk sausage
1 (8 ounce) can mushrooms, drained
16 ounces grated sharp cheddar cheese
6 eggs
2 cups light cream or milk

1. Tear bread into small pieces and put into lightly greased 9 x 13 casserole dish.
2. Cook and crumble sausage.
3. Drain sausage and place over bread.
4. Layer mushrooms and then grated cheese evenly over sausage.
5. Beat eggs, add light cream and mix well.
6. Pour egg mixture over casserole.
7. Bake uncovered at 350* for 30 to 45 minutes.

Hope this helps Sam, it's a simple one.

thankyou guysxxx
If you don't want 2 make everything from scratch, Colman's do a great packet sauce for Sausage Casserole in which you add veg. and sausages - there is also a rich sausage and onion one, but i recommend the original one. Tastes great and doesn't involve too much hassle.
