Does anybody know any nice summery recipes for rhubabrb and gooseberries other than fruit crumble? i don't have a lot of either as it is the first year i have grown them so maybe something that uses both? All tasty suggestions welcome. thanks in advance

Hi JF - make a fool, make jam, make wine, use rhubarb sauce with fish dishes - as in mackerel and ruhubarb - a classic dish - or use gooseberries to make a sauce - also goes well with oily types of fish as it is quite tart - stew g/berries with little sugar, puree and add egg yolk and some butter to gloss.

Make chutney - that will last a while so you can enjoy later in the year; make a gooseberry vinegar; make an r & g sorbet; make your own flavoured yoghurt; make a fruit bread and butter pudding - served with cream of course - make a cheesecake with either - or both - make rhubarb mousse, make a tart sauce for serving with game - hare, pheasent etc,

Wat about a fool ?? Soften some top and tailed gooseberries and chopped rhubarb in unsalted butter for about 5 mins.Crush with a fork and add some brown sugar to taste.Whip up some whipping or double cream to soft peaks.Once the fruit mixture is cool fold in the cream .Dollop into serving glasses of your choice and chill lightly.Serve with a shortbread fingeror two and ENJOY !!!!!!
Gaffer just made me rhubarb and sweet rice,wasn't as bad as I expected
