We have visitors coming to stay for ten days shortly. In these circumstances I like doing one pot meals as I can just chop everything up, bung it in the oven and not have to faff around or disappear into the kitchen.
One of our guests can’t eat lamb or pork. Or tolerate any kind of heat or spice because of a medical condition. Creamy sauces are very much enjoyed but not essential.
I’d really appreciate some ideas, winter casseroles just don’t seem right in July...
Thanks

for a really quick meal I buy a pre cooked chicken and potato salad from lidls and do a salad with it .

The other problem is that in the past I’d have spent hours in the kitchen and thoroughly enjoyed it.
These days half an hour is as much as I can manage for one reason or another, which is where the ‘chop it up one pot bung it all in’ comes in handy.

I used to work in a hotel as a teenager and that's the one dish the chef let me cook.
Chicken fricassee or chicken provencal.
Anyone who doesn't eat pork, lamb, fish or shellfish doesn't deserve to be invited anywhere!

They both look perfect 236sj, can’t understand why I’ve never cooked either of them before, thanks.
Also, thanks Mally, completely overlooked your suggestion.
They’re worth it, diddlydo :)
I’ve just been looking in the EcclesCake section of my recipe folder, all the recipes she gave me, still can’t believe she’s gone :(

Going to JJ but need to put something on the table for the other eight..
you're a good host. I really don't think ten days of dinners should be placed on you - particularly if they have had a big breakfast or lunch that day. I used to do all that but then had to call it a day of being a mug. My visitor days are well and truly over. Thank God and His Holy Mother LOL
A big pot of spaghetti bolognese served with garlic bread and a little salad.

I love having visitors, especially these, they’re very thoughtful but I do like to put myself out a bit for them. I’m sure they’ll help out, they usually do.
ok Ethy - as long as you enjoy them then I think no matter what you cook them - they'll love it.
Traybakes...not so saucy as a stew or casserole, but perfect for ease of preparation.
I used to do one with roast Mediterranean veg, baby potatoes and cod.
Lots of ideas here...

Sorry pasta, only just noticed your suggestion, good idea, thanks.
What I do sometimes (with a slow cooker but you could use a casserole dish) is put chicken breasts in (skinless) with sliced carrots or other veg of choice and then cheat with a tin of Heinz cream of chicken soup mixed with a bit of diluted knorr stockpot and some white wine in a jug then I tip that in. You can use herbs of choice (parsley or tarragon) and some garlic if you wish. If you want to be really lazy and the pot is large enough, you can tip in some baby new potatos or tinned potato.

That’s similar to the one pot chicken supreme recipes I’ve been looking at sj, good idea, thanks again.
