What makes Guinness black and how come the head is still white?

Guinness isn't actually black...it's deep ruby red believe it or not you can test this with the last drop in a pint glass...as for the head why not visit the guinness website (www.guinness.com) for this and lots more interesting facts about the liffey water (like how it isn't actually made from water from the liffey!!)
