Does anyone have recipe for FORESTIER sauce, for chicken, preferably as a 'cook-in' sauce.

I hope this helps, it not a recipe as such but I looked it up in my French cookery encyclopedia and it just says that A La Forestiere is a method of preparing small cuts of meat which are garnished with mushrooms cooked in butter. It is served with thickened stock or the deglazed pan juices.
Not really a cook in sauce I know but it seems fairly quick and easy. Hope this is useful. x

Forestiere is a garnish sauce.


For larger joints - Morels tossed in butter, diced bacon and pommes parmentier.

Hi infomation - glad to help - the astray.com site is one I really plug as it has some great recipes and a really easy interface.
