Cooking Fillet Steak

I hardly ever eat red meat but picked up some lovely fillet steaks the other day which I`m going to do tonight. I have tried cooking steak once or twice before but they`ve never been that tender or I have burnt the outside and the inside was still raw. I like them medium. I know you have to have a really hot pan, oil the steak not the pan etc but is the best way to do it by starting on a grill/pan and then finishing in the oven? I think that`s how they cook them in restaurants.

I'm a philistine, I've nuked fillet steak in the microwave to make sure it's 'cooked '.

I sear all the edges in a very hot pan and then transfer to a roasting tray and place in a warm oven to cook slowly.

Allow meat to rest before serving.
Yes...hot pan, depending on the thickness, 2 mins each side, then into the oven.

I have the oven hot and turn it off when they go in. They finish cooking and rest at the same time.

Thanks NoM. I think that must be the way to do it. I`ve been meaning to get one of those skillets that you can start on the hob and then put straight in the oven. I might get one today.

Most skillet handles can handle an oven.

I think I`ll just pan sear them and chuck them on a pan in the oven - no point spending money on the skillet if I don`t need to. Thanks again.
Do make sure your meat is room temp before cooking...
One other thing to bear in mind, is to let the steak rest for the same amout of time you cooked it in the pan, as this lets the juices in the steak settle. Only season you steak after it has been cooked as the salt draws blood away from the steak and its not as flavoursome.
I am not good at steaks either - everybody says let them rest - surely they are bloody freezing and I love my food boiling hot
I will be having fillet steak for dinner tomorrow cooked in butter in a frying pan. Coat both of the steaks lightly with garlic salt and place in the melted butter on a mediumish/high heat. Do not turn until meat has browned on underside (5mins) and then 5 mins on 2nd side. Should be pink in the middle. Good luck!
I cook fillet steak for 6 mins on fairly high heat. Warm pan, then put in oil, then add steak, cook for 2 mins and turn, another 2 mins and turn, add knob of butter and cook for 1 min and turn, cook 1 min and remove from heat. Leave 2 mins to settle. Then cover with Lea & Perrins and enjoy.

In the end I oiled the steaks, seasoned them and pan fried them in a little butter. Had them with chunky croquettes, grilled tomato, garlicy spinach, onion rings and peppercorn sauce. It was flippin gorgeous.
I would pass on some tips but then these would be to complicated to understand. So I won't.

I would never cook fillet steak in then oven. I like mine rare. Season and whack in a very hot frying pan for a couple of minutes either side. Allow to rest and serve.

Put a knob of butter with a little olive oil in frying pan, allow the butter/oil to sizzle then seal all sides of the steak. Once sealed leave the steak to cook on one side for a couple of minutes, do not move it around the pan, after the underside is nicely browned turn it over and leave it alone for a further 2 minutes, when nicely browned take it out and leave it on a plate to rest. Meanwhile add a tsp of Dijon mustard and some double cream and black pepper to pan, stir till mixed and voila luvvly jubbly.
