Cooking Fillet Steak

I hardly ever eat red meat but picked up some lovely fillet steaks the other day which I`m going to do tonight. I have tried cooking steak once or twice before but they`ve never been that tender or I have burnt the outside and the inside was still raw. I like them medium. I know you have to have a really hot pan, oil the steak not the pan etc but is the best way to do it by starting on a grill/pan and then finishing in the oven? I think that`s how they cook them in restaurants.

I'm a philistine, I've nuked fillet steak in the microwave to make sure it's 'cooked '.

Chrissa, I'm with you on this. 2 minutes each side, and three for OH's steak. I like a bit of blood. Anyway, today I thought I'd see what all the hoo-ha about Aldi's steaks was. Apparently, you have to be quick as they sell fast. Was there nice and early and bought 2 fillet steaks. I can now confirm, they were the best steaks we've ever had from a supermarket. Knocked spots off Tesco!

Look for 21-28 days hung.

so true Ferlew, I buy mine from our wonderful butcher, I got some for my birthday dinner. Must admit I fry in a little butter and oil first then put them in the oven for a few minutes while I make a sauce, they come out just as I like them just pink in the middle and melt in the mouth! As you said it's all in the hanging
If you like your steak medium to well done, there's no point in buying fillet steak. It should only be served blue to rare in my opinion. Max 2 min per side in hot pan, then rested. I prefer 1.5 minutes.
I'll definitely give Aldi a go, horseshoes the next time I am near an Aldi.

fillet steak to have it well done.

Lol Eccles, it's so true.

In our house we have varying degrees of how well a steak should be cooked, OH has it furnaced, I like mine medium/medium rare, daughter likes hers medium rare and son has it rare. It's great fun trying to time it all in and get it on plates at the same time.

The good thing is after the meal has finished we all say, "that was flippin lovely".

And that's all that matters.

Glad that 237SJ enjoyed the steak, I might be making a trip to CostCo this week and may well pick some up - Yum!!
Well done fillet steak? Never! You might as well buy a cheaper cut and cook it for longer. I can eat fillet steak raw - mmmmmmm
