can anybody tell me why the beetroot in my garden gone to seed whats the cause of this, and can you still eat the affected ones tia

Maybe just been left in the ground too long and "bolted". Would think it was still OK to eat the affected ones, just as you can eat potatoes that have started to sprout.
got too dry so under stress it switched to seed production they will be a bit woody but safe to eat
