What Cheese For Cheese Cake?

Hi,
I was wondering what soft cheese everyone uses for their cheesecakes?

I usually use Philadelphia but I think it can have a bit of a strong taste to it and was going to try maybe using something else.

So what do you all use?

I tend to use supermarket own brand version of Philly. Perhaps using part Quark would give you a milder flavour.
I use supermarket own brand as well.
300 g soft cheese
3 tablespoons of caster sugar
600 ml of double cream
Half a bottle of toffee sauce.
Can also use puréed strawberries instead of toffee sauce.
Tastes fab.
Since discovering I have high cholesterol I tried fat free Quark and it works fine.

try mascapone....delish.
A very quick cheesecake if you're in a hurry....

Get a sweet pastry case from supermarket, add a tub or two of mascapone straight from the tub, place fruit of your choice all over the top...tinned peaches are great. Drizzle some honey over the top then rough grate some chocolate all over.

Takes 5 minutes !!!

I use mascarpone, I think it has a milder taste.
