How were seedless grapes first grown? Were they genetically engineered or is it done through clever horticultural blending?

The vines are grown from cuttings, not seeds, and a genetic error in the fruit (the grapes) prevents the seeds inside them (pips) from having a hard outer coating that most seeds have. So because the seeds are soft we think there are none, and call them seedless.
