Does anyone have a recipe for stew made with mince that's nice?

I googled for one last time and just made it with mince, potatoes, stock, onion and thyme but felt there was something missing! Any suggestions?

Take any recipe for beef stew/casserole and make it using minced beef - similarly any recipe for lamb stew/casserole can be made using minced lamb. It will taste good but cost less money. You can also make meatballs using the mince plus flavourings - minced onion - breadcrumbs - egg to bind and then put these into any sauce such as curry or tomato or strogonoff.

Other things you can add are chopped root vegetables such as carrots - swede - parsnips.
Some tomato puree and worcester sauce would give it a bit more flavour.
Put carrots in. They sweeten the sauce.

Thanks! I was going for an irish stew type stew, but using beef mince as we're not keen on lamb! I'll try all your suggestions tonight!
Use guinness instead of stock you get a lovely thick really tasty stew and it's irish!
