Nice in Nice?

We are going to Nice for a few days in May - what are the things to see/do? Probably will hire a car, and haven't got booked into a hotel yet, so suggestions on where to stay also useful. Would we be better to stay out of Nice, say, in Monaco or Cannes?

I stayed an hour out of Nice in the countryside, which was beautiful.  We lay around drinking Rose most days, so cannot recommend much, but the Gorge of Verdon is a stunning drive.  There is a little village at the entrance where if you just keep going down the hill the last building before a ford is a fantastic restaurant.  Can't remember the name of the village, but if you look at a map of the gorge it will be obvious.

Car hire at Nice airport is one of the most horrific experiences of my travels, ever.  Three hour queues in the blazing sun because of the most inefficient system ever known.  Companies like Expedia will, for a modest fee, arrange for you to pick the car up at the terminal rather than the car hire shack.  It is worth it many, many times over.
