How about this?

450g minced beef
100g bacon (pancetta if you can get it)
100g breadcrumbs
1egg
Pepper and salt
1 onion, finely chopped
Beef stock
1 teaspoonful of mixed herbs

Meatloaf Recipes Cooking Instructions:

1. Finely chop the onion and the bacon, add to a large mixing bowl.
2. Then add breadcrumbs, 1 beaten egg, pepper and salt, mixed herbs and about 2-3 tablespoons of stock or warm water, mix well until all the liquid has been absorbed.

3. Grease a bread tin, put the mixture in the tin smooth the top and cover with tinfoil.

4. Cook on Gas 4/ 350f/ 180c for 90 min removing the tinfoil after 60 min.

I make this without the onion. Just mix 500g of mince with two crumbled oxo cubes and 2 slices of bread (crumbed). Mix together with an egg. Press into a well greased loaf tin. Cook at gas mark 5 for about 40 minutes.

You can use the same mix for burgers and make a Kofte kebab using minced lamb.

If you haven't got bread a crumbled weetabix or similar works as well.
The BBC website does have a meatloaf recipe:
