For me, without doubt, the strongest Cheddar I can find.
I agree, extra mature cheddar! And worcester sauce sprinkled on it
i find the best in any cheese dish especially cauliflower cheese is without doubt, lancashire
i always use smoked applewood it is simply fantastic and worth using rather then just run of the mill chedder

I think it depends on what sort of cheese you like ! I like a strong flavoured cheddar - the more mature sort of critter but I also like the smoked applewood. I top my cheese on toast with some fresh chilli bits for extra bite (or you could use chopped onion) and freshly ground black pepper....
