Bramley apples

I have been given a huge bag full of Bramley apples. What is the best way to make stewed apple - i.e., how much water do I put in, how much sugar and what type of sugar do I need, how long do I stew for etc? And any other ideas to use them up would be great, many thanks.

stew with a tablespoon of sugar per kilo. and not much water. put a lid on the pan, when cold freeze in portions. or make a bramble and apple crumble. put the fruit about 12 ounces. in an ovenproof dish about one and a half to two inches deep . sprinkle with sugar. rub 2 ounces of margarine with 4 onces of self-raising flour. add 2 ounces of sugar to the mixture. put on top of the apple and put in oven for 20 minutes at 170 deg
or remove the core. put in a dish of water . fill with raisins, and other fruit. add a drop or two of brandy, spoon of sugar and bake slowly until apple is cooked. the water will stop it burning. also look onwww.deliaonline.com for more..
Peel, core and slice into chunks and microwave for 5 minutes. No water needed. When cool add sugar if required. I don't add any sugar to mine as the Bramleys are quite sweet anyway.
Make a sauce for pork - chop, cook with a couple of cloves, dash cider and touch of sugar. Simmer and reduce to serve.

Add to mash - chop, simmer for 5 mins with some sugar and knob of butter. Mix into mash potatoes..best thing ever with pork sausages...

Use in a soup with parsnip and celery - use a veg stock, add chopped veg and the apple, cored and chopped. Simmer, puree, pass through seive. Serve with swirl of cream...

Good in a west country steak pie - chop apple and add to browned beef, cook in a cider and stock liquor with flaky crust..

Go sweet and sour - apple works well with stir fried prawns with asian spices on noodles...

Use in a hedgerow jam sort of thingy - add to blackberries, elderberries etc. Add some orange rind, and make jam in your usual way....

Dice and add to fishcakes for a sweet flavour...

Many thanks to those who posted, some great suggestions to have a go at - I have lots to use up! I had a go at the crumble this afternoon and I'm pleased to say it turned out very well. Thanks again.
Bramleys are excellent keepers, so if you store them in a cool garage they will keep well. I only ever seem to have a couple of them at any one time, and they keep for weeks in a polythene bag in the fridge. They stew down in about 7 minutes in the microwave with just a little water and a sprinkling of sugar. The apple purree is also a delicious way of livening up breakfast porridge. I just put a large dessertspoonful of it in the bowl before adding the oats & milk (and at this time of year a few blackberries) and cooking for 3 or 4 minutes in the microwave.
