Here's a wee card trick that takes a minutes prep but most people find it good when played on them. It's simple enough. You offer someone the choice of half a deck of cards. Half a deck in your left hand and half a deck in your right. They choose any card from their chosen deck, look at it and place it into the other deck. You then pick up and shuffle the second deck, look through it and present them their chosen card. The trick is that before you do the trick you put all the red cards in one of the decks and all the blacks in the other at the start. Most people won't question it and its done.

The red/black division works well but means no one can really look at the cards faces - if you want to (casually) show the faces of each half pack (so they can see they are all mixed) then here's an improvement. Divide the deck not into colours but into odd and even cards: A, 3, 5, 7, 9, J & K in one pile (all mixed), and all others in the other pile. Trick is then identical to the one you described but now your spectator/victim can glance at the cards without seeing any obvious pattern.
