They are secretly communicating with each other telepathically and are preparing for the moment at which the class consciousness of the herd (the "proletariat") has reached a level at which a Mooist revolution becomes possible, when they overthrow the Human State and build a Dictatorship of the Cowshed before the Farm withers away and all cows will be able to graze freely. They will then have to get the pigs to milk them when they get uncomfortably full.
Like some other people, cattle think about sex and food, mainly. Food all the time. Then every three weeks cows think about sex (until they are in calf), bulls think about it all the time, and steers hardly ever... When thinking about food, most cows think about how dull it is eating the same one kind of grass, all day, every day -- except in the winter when they just east silage, made from the same grass. Apart from that, dairy cattle dream of the AI man. Our own "proper" cattle think about how lovely it is eating flowers, grasses, sedges, trees and rushes, or heather in the winter. When they graze, they get all excited, like a dog with a special treat. When it's time for our girls to think of other things, they have a very convenient and cooperative bull handy...

Lots of observation, and perhaps a certain psychological empathy... You can get a good idea what cattle really care about, by whether they will break through a fence for it.

Humans think of one thing - cows of an udder.
There are people that drive by cows and roll down their window and MOO at them. The cows are wondering, "How did *he* get a car?"
