Not too sweet, good froth on top and a touch of nutmeg.
Everything depends on the quality of the chocolate you're using. Forget all the vile powdered stuff and melt some squares of really good chocolate into full-fat milk. If you're ever in Edinburgh, go to Le Plaisir du Chocolat - it has twelve different types on the menu and you can buy the chocolate they use in the adjoining shop.
If you do use the powder, put it in first then add a little milk and mix together first before putting in the water, it wil get more froth on the top.
Excellent Hot Chocolate: per cup: 1 teaspoon cocoa powder 2 teaspoons sugar Here's the important part -mix these in the cup with a very very small amount of water (1 teaspoon) amount of water. If you add the right amount of water, you won't get lumps. Your mix will look like chocolate syrup,don't worry about the sugar crystals. Add hot milk. While heating the milk stir it with a wire whisk, which will keep the milk from sticking to the bottom of the pan, and make a lovely foamy consistency to the chocolate. When you've emptied the milk pot fill it with warm or hot water to make the pot easy to clean. You don't want to use cold water, as the sudden temperature change warps the metal of the pot. This hot chocolate only takes 5 minutes start to finish. I used to make it for my family all the time.Brings back memories. P.S. We very often topped it with whipped cream.
