Maybe slightly controversial but Eddie Van Halen's solo on Michael Jacksons Beat It is pretty amazing. Sometimes it's not the complexity but how well it fits with and lifts the song / tune.
One of my heroes.

Back in the day before arthritis
It's all in the thumb.

"Best" is impossible to quantify, other than "the one that I prefer".

If you're looking for incredible tone and melody, Steve Hackett's solo in Genesis' Firth of Fifth is hard to beat (starts at 5:44):

This guy takes some beating ! Imho
David Gilmour's solo in "Comfortably Numb" always hits the spot. Also, I've listened to Eddie Van Halen's solo on Michael Jacksons Beat It, and it's a great performance.

Speaking of guitar improvement, I've been tinkering around, too. Switched to a mono jack to enhance sound quality, but I recently read on https://ironageaccessories.com/blogs/iron-age-general-blog/guitar-jacks-mono-stereo-how-to/ that stereo jacks might be the secret sauce. Any opinions on this? Trying to take my solos up a notch!
