What a lot to take on!

I would go to two or three local places that cater for weddings (pubs, hotels and so on) and ask for their sample menus. Find out exactly what would be provided per head.

This should give you some ideas of quantities.

But I have never been to a buffet where the food has run out!

Have a look at websites that cater for ideas too. For example, Waitrose supply buffet food. It will give you some idea of how far the food will stretch.

Good luck with it all. :)
List all the foods you are providing. Workout the average a single person can eat of each food item, e.g 1x finger roll/ 2x sausage rolls ect... & multiply each food item by the total number of people .
5 or 6 different items, mini quiches, pizza, ************, brochettes, sausage slice, bride rolls.etc. times by the number of people plus some extras..
