stovies - never heard of it, but googled and does not seem like my sort of thing (although husband would love it)
sliders - I don't have any buns atm and was hoping not to go out

Make a simple sauce using apple juice or cider and a roux add slice apple and onion then add chopped pork, put in a deep dish and top with mashed spuds. Bake till top is crisp
slice it and put in a casserole dish with sliced onions and gravy
That what bread is for. Two buttered slices, with a slice of roast pok, add whatever else you want. Then enjoy.

I used to make pasta and add chunks of leftover meat/chicken to the sauce.
A hot pork sandwich. Thinly sliced pork between two slices of bread, cover with gravy, accompanied with chips and mushy peas.

loads left - I always buy a bigger joint than needed because they cook better

I'd be tempted to make sweet and sour as well.
I turn leftover meat into a hash. Chop it, fry with some onions and garlic, add leftover chopped veg, then an egg per portion, season and stir all together.
The eggs could also be cracked on top and the dish put in the oven. That would be a bit like Shakshuka plus meat.
