anyone got any ideas to make it into another meal (not stir fry)

I've done it that way as I can't stand seeing the white.

Spring greens, mushrooms tomatoes celery carrots and roast pork

And a good glug of curry paste
Pork a la creme.
Chop pork into cubes, fry with onions, garlic, paprika and mushrooms. Add a pint of chicken stock, let it simmer for an hour. Add creme fraiche and simmer for ten minutes and then serve with pasta.

Accompanied with a lovely green vegetable. My choice would be tenderstem broccoli

This is a lamb version I did a few weeks ago...it had peppers, onions, tomatoes, cheese and egg in it.

I`d cut it up small and chuck it in a Nasi Goreng.
That's a bit like a pork paprikash Tilly.
Looks tasty Bednobs, bet you enjoyed it.
Warm the pork, applying generous slices onto buttered soft roll, put on apple sauce. Jolly nice in my opinion.
Very much so, Pasta. I don't care what it's called really. It's a lovely dish. Fresh pork takes it to another level but left over pork makes a tasty dish too.

Rissoles ........ When I were a lad back in the 1950s, my mum used to make rissoles nearly every Monday or Tuesday with the leftover Sunday joint, she had one of the old fashioned mincers, clamped to the side of our kitchen table, and she would mince up the meat, onions and a little bit of bread and the yolk of an egg to bind it all, then mould the mixture into patties, roll them in flour and fry them, served up with boiled potatoes and veg with plenty of gravy, they were lovely, best meal of the week.

I've got leftover belly pork...rissoles it is then!

I have done paprikash in the past though...yummy.
