As I understand it, 'winter' months are often in greater demand in Egypt as there's less chance of the raging heat of summer, especially inland around Luxor and Cairo. I have heard of people experiencing sudden cold snaps on the Red Sea side, so if you pack some warm stuff you should survive if this happens.
The pictures of the Nativity with snow on the ground may not be fictional after all!
If it is of any use to you, I went to Egypt last year at the beginning of February and it was just over 100 degrees, this may not be the norm, but it was a bearable heat, I actually syated in Cairo and then flew down to Luxor to join the Cruiser.
I was there end January into february and it was scorching for most of the time but a couple of windy/cloudy days. Everything was open as normal. As mentioned might be some issues about getting in the water so make sure you book hotel with a pool! I loved it.
