The 'Pope's Eye' referred originally to the circular - hence the 'eye'-shape element - fatty lymphatic gland in a leg of mutton. It was seen as a particular delicacy and - if a priest was present when that was on the table, it was invariably reserved for him...hence the 'Pope' connection.
