Just had a look and so far have found some pasta, chipolata sausages, sprouts, carrots, onions and a few tomatoes, one leek and one courgette. Now to exercise my imagination. Have already thought of something but is this what is known as fusion cooking?
A cold supper for me. Canned sardine fillets, baked beans (cold), cheese, sliced onion, dill pickles, hard-boiled egg, and a side-dish of pickled beets.
Oh dear. Okay I will prepare a desperation meal. In it's favour it will be fresh and prepared and cooked and not a ready meal or a take away. Gluten free and despite what may be thought tasty..
I know, LJ, my wife died in April and I'm still trying to get used to cooking for one. Although in the above mentioned meal there's obviously no "cooking". But it's simple and tasty.
That's alright ginge. I have to make sure all meals are gluten free and OH is really a meat and two veg type that I get tired of especially I can't digest meat. So it means cooking two meals every time unless we can find something to share..
I'd turn the pasta, tomatoes and courgette into a mini bake with the addition of cheese. The rest could be turned into a kind of hash...everything chopped/shredded and fried up.
I've got a few chipolatas frying now...to be followed in the pan by marinated salmon fillets and a few halved tomatoes.
Mamya's meal sounds good to me too...I love hot smoked fish.
Sorry to hear about Mrs Sanmac, sanmac. I think your meal sounds very nice, hope you had some crusty bread with butter with it. Cooking for one isn't easy, I cooked from scratch for 13 years for just me, but buying small portions is not easy and now I might have a ready meal once or twice a week just so I don't have to cook.
I cooked the pasta and turned the veg into a stir fry. Mixed the two together and then gave OH his sausages on top and grated parmesan. Seemed okay. I don't think OH was over pleased but . . . . . .
