how do I keep flies away from my compost bin, is there something I can buy to do this and not any problems to the compost.

http://www.recyclenow.com/home_composting/usef ul_info/advanced.html says 'food scrpas are too close to the surface' - try burying them further in to the pile.
Might be obvious to do this but also add a load of grass cuttings atc over the last 'fill' and this should help deter the insects.
