If you keep chopping the yellow flowers off, will the ones in my lawn give up? I know they'll re-seed from windblown etc seeds, but will this keep them under control a bit?

NO,
Nothing keeps them under control except work!
Dig them out of the lawn and get as much of the tap root out as poss'.
Push a garden fork into the lawn, about 6 inch from the weed, as deep as it will go and heave up the soil.
The weed can be pulled out. But grasp the tap root and ease the whole plant out.

If you purchase a ready to use sprayer of Verdone and spray the dandelions with it they will die and wont come back - it wont kill the grass either and will kill off many other lawn weeds such as daisies and clover.
Feed & weed with Evergreen, it works everytime for my lawns.
to kill dandelions for good put a half teaspoon of cooking salt in the centre of each and just leave them to die, but if you have hundreds feed and weed is the answer.
