Were can I get a gloss varnish for a brick fire surround?

DONT DO IT,it looks dreadful,trust me
Don't use varnish, use Danish oil.
It gives a more natural 'wet' finish than varnish.
If you are only thinking about sealing the brickwork to stop dust then you are best using a PVA and water mix of about 2water to 1 PVA, This will not only seal the brickwork but it will also bring out the natural colours.
