Make a cheese and ham pie or a quiche
You could mix the ham with some veg and cooked pasta pop it into a pyrex dish, put cheese over it all and pop it into the oven.
Jacket Potatoes - cook the spuds, cut in half and scoop out the inside. Mash with milk, grated cheese and stir in some finely chopped gammon. Put back into the jackets sprinkle with more grated cheese and grill. Yum
toasted ham, cheese and onion sarnies. yummy!
Or, alternatively, cook some rice, let it cool and then fry it in a pan (finely chpped) with the cheese and an egg. A different edge on egg fried rice!
Fritatta

30 ml olive oil
2 large russet potatoes, peeled and shredded
110 g onion, diced
salt and pepper to taste
70 g shredded Cheddar cheese
4 eggs, beaten
Optional: Ham

Preheat the oven to 400 degrees F (200 degrees C).
Heat oil in a 12 inch skillet over medium-high heat. When the skillet is hot, add the potatoes, and fry until crispy and golden, about 15 minutes. Reduce heat to medium, and add onions. Cook, stirring, until softened. Season with salt and pepper. Pour eggs over the potatoes and onions (and ham if you add it).
Place the skillet in the oven for about 10 minutes, or until eggs are firm. Remove from the oven, and sprinkle shredded cheese over the top. Return to the oven for about 5 minutes, or until cheese is melted.

Note: You can add as much ham as you want to this.
